
What’s your order? Nyanya mbisi or fresh raw cabbage? What you ask for at the mahogany oiled counter street food table will always get you the fastfood infamously dubbed as a rolex in Uganda. The vendors who made this treat called out “Rolled Eggs” – nothing more. This echoed more of the word ROLEX. The basic idea is eggs cooked with cabbage, onion, tomato, and sometimes peppers, which is then wrapped in chapati.
So I made a version of it but thought I would use pulled roasted chicken in this dynamite.

Ingredients
• Chapatti
• Whole Eggs
• Roasted Chicken thighs
• Green pepper
• Onions
• Garlic
• Ginger
• Cabbage
• Carrots
• Light soy
• Unsalted butter
• Mayonnase
• Ketchup
• Lettuce
• Salt
• Pepper
Instructions

- Beat the eggs into a cup and sit aside.
Scrap off the chicken and stir fry with vegetables. Season to taste with salt and pepper. - Allow to cool and add to the eggs.
- On a hot frying pan at medium heat, coat with some oil, pour out the egg and chicken mixture and brown both sides.
- Pick the chapatti and lay flat on a chopping board.
- Lay the fried egg on top of the chapatti and spread a sauce (of choice, e.g. mayonnaise, ketchup and lettuce.)
- Roll in and garnish with melted white chocolate or dark chocolate.
